Loaded Guacamole

Scoop up some guac on a chip … or plop some atop toast or a baked sweet potato

Ingredients: 

2 ripe Avocados; peeled, pitted, and cut Ito small pieces 

1 juicy lime; juiced 

1/4 medium red onion; minced into small pieces 

1/4 medium red pepper, washed; minced into small pieces 

1/4 apple, washed and NOT peeled; minced into small pieces 

1/8 cucumber, washed and NOT peeled; minced into small pieces 

1-2 red radishes, washed; minced into small pieces 

1 handful of cilantro, washed and chopped

1 garlic clove or equivalent of jarred minced garlic; minced

1/2 teaspoon sea salt 

1/4 teaspoon cumin 

1/8 teaspoon cayenne pepper 

Optional:  1/4 jalapeno or serrano pepper, washed; minced into small pieces


Preparation: 

1. Place avocado pieces into a bowl; mash with a fork or a potato masher 

2. Mix in lime juice, spices and cilantro; mix well with a fork. 

3. Add in rest of vegetables and mix gently.
