Apple Crumble - Gluten & Dairy Free

Holiday meals can be challenging for those of us with digestive challenges but so many creative and resourceful cooks are making these meals easier to navigate as they share with us delicious and easy-to-prepare alternatives to traditional dishes.

Erin’s Gluten-Free Apple Crumble is the perfect example of how a gluten and dairy-free dessert can be tasty, easy-peasy to make, and fulfill the spot in your tummy usually reserved for apple pie. We’ve added optional autumn-inspired spices and pecans to make it the perfect dessert for your Thanksgiving meal.

Apple Crumble

Gluten & Dairy Free | 6-8 servings | 1 hour to prepare & cook

Ingredients for the topping:

  • 3/4 cup + 1 tablespoon gluten-free oat flour*

  • 1-1/4 cups gluten-free rolled oats

  • 2 teaspoons ground cinnamon

  • 2/3 cup brown sugar, coconut sugar, or Swerve brown sugar substitute

  • 1/2 cup + 1 tablespoon refined coconut oil, melted and cooled slightly (for dairy-free) OR 2/3 cup butter, melted

  • 1/4 teaspoon salt

  • OPTIONAL: 1/2 cup of pecans, toasted and chopped

Ingredients for the filling:

  • 2 tablespoons gluten-free oat flour*

  • 1/4 cup brown sugar, coconut sugar, or Swerve brown sugar substitute

  • 2 teaspoons lemon juice (about half of a lemon, squeezed)

  • 1 teaspoon ground cinnamon

  • 1 teaspoon vanilla extract

  • 6 cups apple, chopped - about 3/4-inch chunks, from about 5 medium peeled apples

    • OPTIONAL: Don’t peel the apples for additional nutrients and fiber

  • OPTIONAL: 1/4 teaspoon each of cardamon & nutmeg

Directions:

  1. Adjust the oven rack to the lower third of the oven. Preheat oven to 350°F and set out a 1-quart casserole dish or an 8 × 8-inch baking dish.

  2. In a medium mixing bowl, mix together all of the topping ingredients (it’s OK if it’s pretty wet).

  3. Prepare the apple filling: Add chopped apples into a large mixing bowl and then sprinkle the oat flour, sugar, lemon juice, cinnamon, vanilla extract, and (optional) cardamom and nutmeg on top. Stir to coat the apples in the mixture. Spoon the apple mixture into the pan. Spoon the apple mixture into the pan and distribute the topping evenly over the top in a thick layer.

  4. Place the apple crumble on a baking sheet to catch spills and bake for 30 to 35 minutes or until the topping is firm and the edges are bubbly. Let cool for 1 hour, which will give the juice some time to slightly thicken.

  5. Serve warm, room temperature, or cold.

  6. An apple crumble or crisp covered and left at room temperature will last a couple of days, but you run the risk of bacteria growing on the apples, so best to refrigerate it.

  7. IMPORTANT: Let the apple crumble completely cool before applying any covering. Then just cover the crisp with plastic wrap or transfer it to an airtight container and store it for up to 4 days.

    *Note: You can make gluten-free oat flour by putting 1 to 2 cups of gluten-free oats into a powerful blender and blend until it becomes a medium-fine powder. Store the extra oat flour in a glass container for the next time you make this Apple Crumble because there will be a next time!
